Pumpkin and Vegetables Croquette
   
Ingredients
Del Monte Mixed Vegetables (190g) 1 box, Del Monte Wasabi Mayonnaise appropriate, Small Pumpkin 1 pc (400g), Potato 1 pc (200g), Bread Crumbs 150g, Plain Flour 60g, Egg 2pcs, Salad Vegetables appropriate, Black Vinegar Sauce (optional) appropriate
 
Marinade
Black pepper ½ tsp, Sea Salt 1 tsp, Unsalted Margarine 20g
 
Del Monte Mixed Vegetables (190g x 3 packs)
Steps
1.
Peel and diced the potato and pumpkin.
2.
Boil a pot of water, add the diced potatoes and diced pumpkins and boil for 10 minutes until tender. Drain and set aside.
3.
Fry the breadcrumbs until golden brown and set aside.
4.
Smash the cooked potatoes and pumpkins, add the drained Del Monte Mixed Vegetables, black pepper, sea salt and unsalted margarine, and mix well.
5.
Preheat the oven to 200ºC. Turn the mash into a cake shape, dip it in flour, egg liquid and bread crumbs in order.
6.
Put the croquettes in the oven and bake for 10-15 minutes.
Add an appropriate amount of mustard mayonnaise on the center of the plate, smooth it with the back of the spoon in a circle, put on the croquette, and place some salad vegetables on top (add a little black vinegar) and serve.
