Hot Sour Soup with Pineapple & Tomato
   
Ingredients
Del Monte Pineapple Chunks 50g, Del Monte Peeled Diced Tomatoes 1/2 can, Shrimp 8 pcs (pickled), Straw Mushroom 8 dices, Lemongrass 2 pcs (chopped & crushed), Galangal 6 pcs, Lemon Leaf 5 pcs, Hot Pepper 3 pcs (crushed), Coriander some, Stock 1000ml
 
Marinade
Lime Juice 3 tsp, Fish Sauce, Sugar 1 tbsp, Chili Oil some
 
Steps
1.
Heat up the pan, saute lemongrass, galangal, lemon leaf, hot pepper & coriander over medium-high heat.
2.
Add stock, straw mushroom, pineapple, peeled diced tomatoes and the seasonings, cook for 8-10 minutes. Use sieve to skim off scum when cooked.
3.
Add Shrimp until well done, put coriander inside. Ready to serve.
