Ingredients
|
1/2 box of Del Monte Pumpkin & Carrot Soup 3 tbsps. Del Monte Mixed Vegetables 3 scallops 1 bowl of Macaroni (cooked) (80g) 2 gloves of garlic 1/4 onion 2 tbsps. chopped dried parsley 1/4 bowl of pumpkin (diced) |

Marinade
|
A pinch of salt & pepper
|

Steps
|
|
Boil the Macaroni according to instruction, deduct 1 minute of the suggested time. Drain the pasta when cooked. |
|
Heat up the pan with shallow oil, sear and brown the scallops for 30 seconds each side, season with a pinch of salt and pepper. Leave them on a plate. |
|
Heat up another pan with some oil, brown the onion and garlic, then add pumpkin and cook till soften. |
|
Add Pumpkin & Carrot Soup in the pan, boil it. Then put the cooked Macaroni and Mixed Vegetables in, season with salt and pepper. Turn up the heat and thicken the sauce. |
|
Sprinkle a pinch of dried parsley, top with the scallops. |
